I love the Punch-Out! series! A full-on over-the-shoulder Boss Rush, with full animation and so much character. I wish it took off more, so that we could have either more guest stars, like Donkey Kong or the proposed Princess Peach, or just full-on spinoffs and turn it into a whole genre.
